Wholemeal Choc Chip Banana Bread

  • 1 ¾ cups whole meal flour

  • ⅓ cup melted coconut oil or extra-virgin olive oil

  • ½ cup honey or maple syrup

  • 2 eggs

  • 3 small to medium bananas mashed

  • 1 teaspoon baking soda (NOT baking powder)

  • 1 teaspoon vanilla extract

  • ½ teaspoon salt

  • ½ teaspoon cinnamon

  • As many or as little Chocolate chips or Easter eggs as you like

  • Other optional mix ins: chopped Nuts, dried fruits, blueberries.

INSTRUCTIONS

  1. Preheat oven to 180 degrees Celsius.

  2. In a large bowl, beat the oil and honey together with a whisk. Add the eggs and beat well, then whisk in the mashed bananas.

  3. Add the baking soda, vanilla, salt and cinnamon, and whisk to blend. Then stir in the flour, just until combined. Add chocolate chips or Easter eggs or any additional mix-ins now.

  4. Pour the mixture into your banana bread tin, top with chocolate chips.

  5. Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool in the tin for 10 minutes, then transfer it to a wire rack to cool for 20 minutes before slicing.

  6. Enjoy with a cuppa and great for kids snacks as well.
