Sweet potato brownies
160 grams uncooked sweet potato, roughly chopped
2 eggs
70 grams peanut butter
3 tablespoons light tasting olive oil
1 teaspoon vanilla extract
40 grams coconut sugar
60 grams cocoa powder, or cacao (or half and half)
35 grams plain flour
1 teaspoon baking powder
1/4 teaspoon sea salt
60 grams dark chocolate, roughly chopped
Steam sweet potato over boiling water until soft, 8-10 minutes. Mash and set aside to cool down.
Pre heat oven to 180•c and prepare a square baking tin with baking paper.
In a medium size bowl whisk the sweet potato and eggs together.
Then whisk the peanut butter, olive oil, vanilla and sugar in until fully combined.
Stir in the cocoa powder, flour, salt and baking powder.
Once mixed add the chocolate and fold together.
Pour and press the batter into the tin and bake for 30-40 minutes depending on your oven.
Once ready, let cool in the tin for 15 minutes then take out of the tin and place on a cooking rack.
If desired, sprinkle sea salt flakes over the top and Slice into squares!
