Mels Quinoa Spring Salad

Make 1 cup of quinoa, toss through the below ingredients and drizzle with olive oil, lemon juice, salt and pepper!! This is a complete meal on its own, however it goes well with pretty much any protein, fish, chicken, lamb etc. Ingredients: Crushed almonds, whole cranberries (from the nut shop) chopped parsley, diced capsicum, diced red onion & pepitas. Store in the fridge for up to 3 days. Add a tin of tuna for lunch or left over protein from the night before.. Avocado and feta are a great addition to this recipe too. I hope you enjoy this fresh vibrant quinoa salad!
